Fresh Ham

Let Ham come to room temperature for 1-2 hours.

Preheat the oven to 450°F.

Season the pork with salt, pepper and garlic, if it is not already seasoned. Do not be afraid to season heavily, since this will help to create your gravy.

Place meat in a roasting pan in a preheated oven and begin to roast for 30 minutes to start to brown.

Turn the oven down to 325°F.
For a roast weighing 5-8 lbs., cook for 3 to 4 hours.
For a roast weighing 10-14 lbs., cook 4 to 5 hours.

Baste roast every 30 minutes with a cup of cold broth or water.
Oven times will vary. Always be sure to check internal temperature with a thermometer.
Internal temperature should be 145°F.
