Leg of Lamb
Preheat oven to 425°F.
Place Roast in oven and cook for 20 minutes at 425°F.
Turn oven down to 250°F.
After 35 minutes, pour 1/2 cup of cold water or stock over the roast and begin basting.
Repeat every 35 minutes.
Total cooking time at 250°F should be 1 hours and 45 minutes – 2 hours.
Internal Temperature should be 145°F for a Medium Well Roast.
Use the juice created from basting to create your own gravy.
