

NY Striploin Roast
Allow your roast to come to room temperature before roasting (takes approx. 2-3 hours).
Preheat oven to 250°F.
Coat roast lightly with olive oil,salt, pepper, garlic powder and sear in a hot pan on all sides of the meat (approx. 2 minutes). If your roast is too large to sear in a pan on the stovetop, rather pre-heat the oven to 425°F and sear in the oven for about 15 minutes. Then turn the temperature down to 250°F.
Carefully place roast on a wire rack in the center of roasting pan, fat side up.
Cook uncovered, basting with water every half hour.
Rare: Internal Temp. 125°; approximately 1 ½ hours
Medium Rare: Internal Temp. 130°
Medium: Internal Temp. 135°
Rest, covered, for 20 minutes to allow the juices to settle.
